Ingredient
Makes about 3-4 servings

4 boneless chicken breast halves (about 500g)
2/3 cup bread crumbs
salt and freshly ground black pepper
canola oil for drizzle

Sesame Sauce
1 tablespoon sesame oil
2 cloves minced garlic
1/3 cup honey
1/3 cup light soy sauce
1/2 cup braised chicken or water
2 tablespoons cornstarch
2 tablespoons of water
1 teaspoon fresh ginger
1 teaspoon chili sauce or chili jam
1/4 cup vinegar
1/4 cup brown sugar

2 tablespoons toasted sesame seeds

Direction

1. Preheat oven to 350F (180C). Line a baking sheet with parchment paper. Place breadcrumbs in a flat bowl and set aside.

2. Cut chicken breasts into 1-inch pieces and season with salt and pepper. Coat each slice in breadcrumbs and place in the prepared baking tray. Drizzle a little oil and bake for 25-30 minutes until the cake is done.

3. Prepare the sauce: In a sauce pan over medium heat, add sesame oil, garlic, ginger, chili jam and stir for a few seconds. Add water (chicken stock), soy sauce, honey, vinegar, and brown sugar. Stir until boiling.

4. Whisk the cornstarch with 2 tablespoons of water and when the mixture is boiling, add the cornstarch mixture, stirring until thickened. Keep the heat very low until the chicken is cooked through.

5. Pour sauce over chicken and sprinkle sesame on top. Serve immediately with accompanying rice.
