How to make Margherita Pizza

Ingredient:

Make 1 large pizza – 3 or 4 servings

Cauliflower crust
1 medium cauliflower (about 750g)
1 cup (100g) ground almonds
2 eggs
1 teaspoon dried oregano
1 teaspoon dried basil
salt and freshly ground black pepper
Topping
4 tablespoons ketchup
3 or 4 cherry tomatoes, sliced
4.5 oz (130 g) Mozzarella cheese, sliced
fresh basil or parsley, chopped
freshly ground black pepper

Direction

1. Prepare the cauliflower rind. Preheat oven to 375F (190C). Line a baking sheet with parchment paper.

2. Wash and cut the cauliflower into florets and place in the bowl of your food processor, and process until finely chopped, like rice. Transfer to prepared baking tray and bake for 15 minutes. Remove and let cool a bit.

3. Place the cooked cauliflower in a tea towel and squeeze out as much liquid as possible, then transfer to a clean bowl.

4. Turn oven up to 470F (240C).

5. Add almonds, eggs, dried herbs, salt and pepper. Stir until well combined.

6. Line a baking tray with parchment and grease with grease. Place the cauliflower mixture in the center and use a spatula and hands to spread it into a 12-inch (30 cm) circle.

7. Bake for 15 minutes until golden brown. Remove and set aside to cool slightly.

8. Spread tomato sauce over the crust, add slices of Mozzarella cheese, tomato slices on top, chopped fresh basil leaves or parsley and freshly ground black pepper.

9. Bake for another 8-10 minutes until cheese is melted. Let cool slightly before serving and add some fresh basil/parsley leaves on top. Interesting!!
