Tomato basil tarts are one of the best ways to enjoy summer with fresh tomatoes and herbs. This recipe can be made for breakfast, lunch or dinner, is easy to make and tastes like summer. There is nothing better than enjoying tomatoes combined with cheese, herbs and pastry crust. By far one of the best summer treats ever.

Ingredient
Makes about 4-6 servings
1 sheet (400 g) puff pastry, defrosted
4 tablespoons (60g) cream cheese
1 clove of minced garlic
1 teaspoon Dijon mustard
3 tablespoons fresh basil, chopped
1/4 cup (25g) grated Parmesan cheese
1 cup (100g) grated mozzarella cheese
4 medium tomatoes (about 600g), sliced about 1/4 inch
Freshly ground black pepper
Direction:
1. Preheat oven to 400F (200C).
2. Cut tomatoes into 1/4″ (6 mm) slices and place on paper towels to drain for about 15-20 minutes. Cover with paper towels.
3. In a small bowl, combine cream cheese, Dijon mustard, garlic, basil, and Parmesan cheese.
4. On the floured surface, roll the puff pastry into a 12×14 inch (30X35cm) rectangle. Transfer the dough to parchment
lined baking tray. Use a fork to poke all over the cake but don’t use a fork up to the edge as you leave about 1 inch for the border.
5. Spread a thin layer of the cheese mixture over the puff pastry. Sprinkle Mozzarella cheese evenly on top.
6. Arrange tomato slices on top.
7. Bake for 20 to 25 minutes until crust is golden, cheese has melted, and tomatoes are cooked through.
8. Sprinkle fresh basil on top and serve hot.
