Making scotch eggs is actually not as difficult as some people think and it makes a great side dish for breakfast or any other part of the day. They can be a great picnic treat or a party snack. The classic scotch eggs are deep fried but toasting them makes them a bit healthier and they really are delicious.

How To Make Baked Scotch Eggs

Ingredient

Make 4 servings
4 eggs
1 pound (450g) good quality sausage meat, peeled
1/2 teaspoon (2g) nutmeg
1 teaspoon (5g) mustard
1/4 cup (14g) parsley
1/2 cup (14g) chives
Salt and freshly ground black pepper
For coating
Flour
2 eggs, beaten
Bread crumbs or tortillas

1. Put the eggs in a medium saucepan, cover with cold water and bring to a boil. Bring to a boil for 4 minutes, then transfer to a bowl of ice cold water. Peel when cool.

2. In a medium bowl, combine sausage meat with nutmeg, mustard, parsley, chives, salt, and pepper. Divide the mixture into four parts.

3. Take a piece of the sausage mix, form a ball and flatten it into a patty. Roll eggs in flour and shape sausages around eggs. Repeat this step with the remaining eggs.

4. Preheat oven to 400F (200C).

5. Roll each coated egg in flour, then dip in beaten egg and top with breadcrumbs or crushed cornmeal.

6. Place on an unglazed baking tray and bake for 35 minutes until sausage is fully cooked.

7. Rest for 5 minutes before serving.
