Ingredient
Makes about 6 servings
Mascarpone ice cream
3 eggs
3 + 2 tablespoons (45g + 30g) sugar
1 teaspoon (5g) vanilla extract
9 oz (250g) mascarpone cheese
a little salt
To soak
1 cup (240 ml) of espresso, at room temperature
2 tablespoons (30ml) amaretto liqueur
20 Savoyardi ladybugs (about 180g)

1. Separate the egg yolk from the white. Mix egg yolks with 3 tablespoons sugar in a saucepan with water and simmer until thickened, creamy, and light golden in color. A thermometer should read 160F (70C). Add vanilla extract and transfer to another bowl to cool faster.
2. Add mascarpone cheese and mix well.
3. Beat egg whites with remaining 2 tablespoons sugar and salt, until frothy and gently add mascarpone mixture.
4. Combine the cooled espresso with the liqueur and set aside.
5. Quickly dip the ladybug tablets into the coffee mix and lay in a single layer on the bottom of an 8 X 8 inch tray. Do not soak the ladybugs too much, just soak the edges, not the whole thing.
6. Add half of the mascarpone mixture. Spread another layer of soaked ladyfingers and add the rest of the mascarpone mixture
on top. Cover and refrigerate overnight or at least 4-6 hours before serving. Sprinkle cocoa powder on top and serve on a plate.
