1/4 cup (30g) cornmeal

1/2 cup (100g) sugar
1/3 cup (40g) cocoa powder
1/4 cup (30g) cornmeal
1/4 teaspoon (2g) salt
2 2/3 cups (640ml) milk
1 large egg
1 teaspoon (5g) vanilla extract

 

1. In a medium bowl, whisk together sugar, cornstarch and salt. If making chocolate pudding, add cocoa powder as well. In another bowl, beat eggs and add 2/3 cup (160ml) milk and stir well. Gradually pour the milk mixture over the cornstarch mixture and beat until smooth. Set aside while you boil the rest of the milk.

2. Boil the remaining milk (2 cups – 480ml) in a medium sauce pan.

3. Turn off the heat and gradually add the egg mixture through the hot whisk the whole time. Reduce heat to medium and cook, stirring constantly, until mixture thickens, about 3 minutes. Remove from heat and stir in vanilla extract. Only when needed, you can stretch it to make sure no lumps form.

4. Repeat step 2 with the chocolate pudding in case you do both.

5. Pour pudding over six dishes, place cling film directly on top of pudding and chill for at least 2 or 3 hours or serve warm. You can serve with nuts or chocolate puree or fresh fruit.
