Ingredient
Makes about 2 servings
7 oz (200g) spaghetti
2 tablespoons olive oil
2.5 oz (70g) bacon, cut into small pieces
2 eggs, beaten
1/2 cup (50g) Parmesan cheese
freshly ground pepper
1. Cook pasta to done in salted water according to package directions. Reserve some cooking water and drain the noodles.
2. Heat oil in a pan and cook bacon until crispy.
3. Meanwhile, beat eggs, cheese and pepper in a bowl and set aside.
4. Add pasta and stir. to good coat. Remove from heat, let cool slightly, and then add egg and cheese mixture.
5. Stir to coat the noodles, adding a little more water if needed to get the desired consistency.
6. Serve immediately.
