How To Make Rough Puff Pastry – Recipe

This quick recipe incorporates butter into the dough and simply rolls and folds several times without needing to refrigerate midway.

Ingredient

Makes about 10 oz (300g) of puff pastry

Rough Puff Pastry
1 1/4 cups (157g) all-purpose flour
1/2 cup + 3 tablespoons (157g) butter, chilled, cut into cubes
1/2 teaspoon (3g) salt
1/3 cup (80ml) ice cold water

For apple pastry
3 tablespoons (45g) sugar
1 teaspoon (3g) cinnamon
1 small egg, beaten
1 1 medium apple, peeled and cut into thin slices

1. Prepare raw puff pastry. Sift flour and salt into a large bowl. Blend the butter into the dough with a pastry blender or fork or a pastry processor, until crumbs form. Add water and stir until the water thickens. Do not knead the dough too thoroughly as the butter blocks need to be visible. Cover with cling film and refrigerate for 20 minutes.

2. Place dough on work surface, roll dough until it is 3 times as long, into a rectangle measuring about 6 X 17 inches (15 cmX45 cm). Fold the top third down to the center, then fold the bottom third up. If necessary, brush off excess powder. Rotate it left or right and roll it up to three times the length. Repeat the roll and fold for a total of 4 to 6 times. If the dough is sticky during this process, refrigerate for 30 minutes and continue.

3. Cover with cling film and chill for at least 30 minutes before rolling to use. You can also refrigerate the dough overnight and keep it cold for a few days.

4. Make apple pie.

5. Preheat oven to 400F (200C).

6. In a small bowl, mix the sugar with the cinnamon.

7. On top of the floured surface, roll the dough into a 12×17 inch (30x45cm) rectangle. Cut the dough into 6 pieces. Transfer the dough pieces to a baking tray lined with parchment paper.

8. Use a fork to poke the center of each piece of cake and beat with egg.

9. Sprinkle some cinnamon sugar over the pastry and place apple slices in the center of each one. Sprinkle some cinnamon sugar over the apples.

10. Bake for 20-25 minutes until puffy and golden.

11. Cool completely on wire rack. Dust with powdered sugar before using if desired.
