Tortilla de Patatas aka Spanish Omelette or Tortilla Española
is a traditional Spanish dish made with simple basic ingredients such as eggs, potatoes and onions. Potatoes and onions are cooked in extra virgin olive oil until tender but not brown. Then drain the potatoes and mix with the beaten eggs, return to the pan and cook on both sides in a little oil until golden brown. Some like it more watery, some like it drier, it’s entirely up to you. It is simply delicious and crowd-pleasing.
