Chocolate hazelnut cake
2 eggs, separated
1/4 teaspoon (1g) salt
1/3 cup (70g) sugar
2/3 cup (70g) hazelnuts
2 tablespoons (16g) unsweetened cocoa powder
Crispy hazelnuts
Streusel Dough
1/4 cup (60g) butter, room temperature
1/4 cup (50g) brown sugar
1/2 teaspoon (2g) salt
1/2 cup (50g) hazelnuts
1/2 cup (60g) all-purpose flour
For the crisis
1/2 cup (40g) paillete feuilletine or cornmeal
1/3 cup (100g) Nutella
Nutella Mousse
Half-week chocolate 5.5 oz (150g)
1/2 cup (120g) whipped cream
1/2 cup (150g) Nutella
2 teaspoons (8g) gelatin powder
2 tablespoons (30ml) cold water
1 1/2 cups (360g) whipping cream (35% fat), chilled
chocolate glaze
4 oz (120g) half a week chocolate
5 oz (140g) whipped cream
