Chocolate peanut butter cookie cups are a great idea to make a one-off dessert for any occasion. They look and taste absolutely amazing not to mention they’re pretty easy to make.

 Chocolate Cookies
 1 cup (125g) all-purpose flour
 1/3 cup (40g) unsweetened cocoa powder
 1/2 teaspoon (3g) baking soda
 1/2 teaspoon (3g) salt
 1/2 teaspoon (1g) instant coffee
 1/2 cup (113g) unsalted butter, room temperature
 1/3 cup (70g) packaged brown sugar
 1/3 cup (70g) sugar
 1 egg
 1 teaspoon (5g) vanilla extract
 1/4 cup (40g) semi-sweet chocolate chips
 peanut butter frosting
 1/2 cup (120ml) fresh cream, chilled
 4 oz (120g) cream cheese, room temperature
 1/3 cup (80g) peanut butter, room temperature
 1/3 cup (40g) powdered sugar
GUIDE
Preheat oven to 375 degrees F (190 degrees C). Whisk together flour, salt and baking soda in a medium bowl; set aside.
 Beat butter, sugar, peanut butter, and brown sugar until fluffy. Beat eggs, vanilla and milk. Add flour mixture; mix. Shape into 1-inch balls and place each in a greased muffin tin (or use paper liners).
 Bake at 375 degrees for about 8 minutes. Do not exceed! Remove from oven and immediately press a mini peanut butter cup into balls. Cool and carefully remove from pan.
