Strawberry Oat Crumble Bars

Earth’s crust
3/4 cup (95) all-purpose flour
1 cup (100g) rolled oats
1/2 cup (100g) light brown sugar
1/2 teaspoon (2g) baking powder
1/4 teaspoon (1g) salt
1/2 cup (113g) unsalted butter, room temperature
1 teaspoon (5g) vanilla extract

Strawberry filling
10 oz (300g) fresh strawberries
2 tablespoons (30g) sugar
1 tablespoon (8g) cornstarch

1. Preheat oven to 350F (180C). Grease an 8×8 inch (20x20cm) square pan and line it with parchment paper, so that some of the sides are longer to make it easier to lift it up once it’s set.

2. In a bowl, mix flour, oats, brown sugar, baking powder and salt. Add the butter and vanilla and stir until combined and crumbly. Set aside about 1 cup.

3. Press the remaining crumb mixture into the bottom of the pan.

4. Cut the strawberries into small pieces and put them in a bowl. Add sugar, lemon zest and cornstarch and top. Spread the strawberries on the pie crust.

5. Sprinkle the prepared crumb mixture over the strawberries.

6. Bake for 30-40 minutes or until lightly golden. Cool completely.
