How to make Chicken Stir-Fry Noodles

Makes 3-4 servings
1 medium carrot (90g), thinly sliced
1 red chili (120g), cut into thin strips
1 1/2 inches (4cm) fresh ginger (25g), finely chopped
2 cloves of garlic, finely chopped
2 small green onions
1 head Broccoli (250g), cut into small pieces
7 oz (200g) chicken breast, cut into thin strips
Dried Egg Noodles 8 oz (230g)
2 tablespoons (24g) sesame oil
1 teaspoon (5g) brown sugar
3 tablespoons (45g) light soy sauce
2 tablespoons (30g) Fish / oyster sauce

1. Cook noodles in boiling salted water according to package directions. Drain and rinse under cold running water. Toss with a little vegetable oil. Set aside until ready to use.

2. Heat oil in a large saucepan over medium heat.

3. Add chicken and stir over high heat until golden. Add garlic and ginger and fry for 30 seconds.

4. Add the vegetables and stir-fry for another 2-3 minutes on medium and high heat, stirring constantly until evenly cooked.

5. Add sugar, cooked noodles, soy sauce, oyster sauce and stir well.

6. Serve immediately.
