How to make Lemon Bars

Earth’s crust
2 cups (250g) all-purpose flour
1/2 cup (100g) sugar
1/2 teaspoon (3g) salt
1 cup (226g) chilled butter, cut into small cubes
pour until it’s full
1 1/2 cups (300g) sugar
1/4 cup (32g) all-purpose flour
4 eggs
2 tablespoons (12g) lemon zest, from about 4 medium lemons
2/3 cup (160g) lemon juice, from about 4 medium lemons
For head screening
Powdered sugar

1. Preheat oven to 350F (180C). Grease a 9 x 13 inch (23 x 33cm) baking pan with butter. Line with parchment.

2. Prepare the crust. In a large bowl, mix flour, sugar, and salt. Add the butter and use a pastry blender or simply cut the butter with a fork until crumbs form.

3. Using your fingers and the back of a spatula, press the mixture onto the bottom and sides of the prepared baking pan. Bake for about 20 minutes until lightly golden brown. Set aside and let cool a bit.

4. Meanwhile prepare the filling. In a large bowl, whisk the sugar with the flour. Beat eggs and add lemon zest and lime juice.

5. Pour the lemon mixture over the prepared pie crust and bake for another 20 minutes until the cake is done.

6. Cool completely at room temperature and, if possible, refrigerate a few hours before using.

7. Sift powdered sugar on top and use a hot knife to cut into bars.
