How to make Greek Baked Feta with Tomatoes

Ingredients

Makes about 2-4 servings

7 oz (200g) Feta cheese , 1 block
1 pound (450g) ripe tomatoes
1 small red onion , about 2.5 oz – 75g
1 red pointed pepper , about 3 oz- 90g
1 long green chili pepper
1 tsp dried oregano
chili flakes
extra virgin olive oil
salt and freshly ground black pepper

STEP 1
Cut 1 tomato in the center, then cut two slices from the center and set aside. Scoop the seeds from the rest of the tomato, then grate the flesh, removing the skin. Remove the seeds and grate the rest of the tomato in the same way, then mix the grated meat with the garlic. Season with seasoning and place in a 16cm baking dish.

STEP 2
Preheat oven to 200C/180C fan/gas 6. Dip feta cubes in garlic-flavored tomatoes, then top with sliced tomatoes, peppers, oregano, olive oil, and a pinch of sea salt. Cover and bake for 15 minutes, then open and bake for another 15 minutes. Serve hot with pitta or keto bread for dipping.
