Meaty, succulent and utterly satisfying, Cottage Pie is one of the best comfort foods ever. Although it requires some time in the kitchen, it is not very difficult to do.
Ingredient
4 c mashed potatoes*
1 lbs ground beef, 85% lean
1 onion, diced small
2 carrots, diced
2 cloves garlic, minced
2 tablespoons unbleached all-purpose flour
1 tablespoon ketchup
1 c beef broth, (we prefer less sodium)
2 teaspoons Worcestershire
1 teaspoon thyme sprigs
½ teaspoon salt (or to taste)
Instruct
Preheat your oven to 400F.
Sauté your beef over medium-high heat until golden brown, 7-10 minutes. Remove the beef from the pan.
Add the vegetables** and garlic to the beef broth in the pan. Cook until tender, 7-10 minutes.
Reduce heat to medium and add tomato paste and flour. Stir-fry until the dough is completely moistened.
Return the cooked beef to the pan. Add broth, Worcestershire sauce, and thyme. Simmer for 5-10 minutes, until the gravy thickens.
Taste the mixture and season with salt and pepper to taste.
Transfer meat mixture to a greased 8×8 baking dish. Spoon or tube of mashed potatoes over the meat mixture.
Place the plate in the oven at 400F and cook for 20-30 minutes or until the top is golden and the filling is bubbly.
Let stand 5-10 minutes before serving.
