This simple recipe makes the most amazing custard. It thickens as it cools. In some countries, cornstarch is also known as cornstarch. My cornstarch (US) has a very fine powdery texture, like powdered sugar.
Recipe
80g sugar
20g water
25g warm water
4 eggs
360g milk
40g fresh cream
95g sugar
Instruct:
In a medium saucepan, combine sugar and cornstarch.
Slowly add milk and egg yolks and beat well.
Place over medium heat and bring to a boil. Cook for about 1 minute, stirring constantly, until thickened. (it will thicken as it cools)
Pour into a serving cup and let cool or refrigerate, UNTIL, until set – about an hour.
