Ingredient
Makes 10 crepes – 8 inches (20 cm)
2 eggs
1 tablespoon (20g) honey
1/4 teaspoon (1g) salt
1 teaspoon (5g) vanilla extract
1¼ cups (300ml) milk, your choice
1/2 cup (50g) oatmeal
1/2 cup (50g) almond flour
Direction
Whisk together flour and eggs in a large mixing bowl; Slowly add milk and water, stir well. Add salt and melted butter; Beat until you win.
Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or spoon the batter onto the griddle, using about 1/4 cup for each crêpe. Tilt the pan in a circular motion so that the dough covers the surface evenly.
Cook until the top of the crêpe is no longer wet and the bottom is lightly browned, 1 to 2 minutes. Run spatula around edge of pan to loosen crêpe; Flip and cook until other side turns light brown, about 1 minute more. Eat hot.
