How to Make Crispy Salmon Patties

Ingredient

1 pound (500g) boneless salmon fillet
1 small red chili
4 green onions
2 cloves of garlic, minced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh dill, chopped
1/3 cup (50g) breadcrumbs
3/4 teaspoon (4g) salt
lemon peel from a lemon
1 tablespoon (15g) lemon juice
2 large eggs
1 tablespoon (15g) Worcestershire sauce
Freshly ground pepper

To cook
3 tablespoons olive oil for frying
1/3 cup (50g) breadcrumbs to coat the patties

Instruct

Add enough oil to cover the bottom of a large nonstick pan to a depth of 1/4 inch. Heat a pan with oil over medium heat while preparing the salmon.

Combine salmon, eggs, and 1/2 cup Italian breadcrumbs. Stir thoroughly until mixture is well combined. Pour remaining 1/2 cup breadcrumbs onto plate.

Form the mixture into round pieces about the size of the center of your palm. Place formed patties on top of breadcrumbs on plate; Gently pat the breadcrumbs to stick, then turn over and pat the other side lightly into the breadcrumbs.

Gently slide each piece of cake into the pan. Fry on one side for 2 to 3 minutes, until the cooked side is golden brown. Flip the patties over and fry the other side in the same way.

When both sides are golden brown, remove to a plate lined with absorbent paper to absorb excess oil. Serve warm.
