This Homemade Sweet Potato Gnocchi is a cozy twist on a classic favorite. Made with fresh, vibrant sweet potatoes, they provide a comforting and flavorful eating experience. Paired perfectly with garlic butter sauce and Parmesan cheese, they make for an unforgettable meal.
Ingredient
For Homemade Gnocchi – make 2 pounds (1kg) gnocchi
2 pounds (1kg) sweet potatoes
1 egg
2 cups (250g) all-purpose flour, use up to 2 1/2 cups (310g) flour if dough is too sticky
Fried Gnocchi in Sage Garlic Butter – makes 1 pound (500g) of gnocchi – makes 3-4 servings
1 pound (500g) boiled gnocchi
2 tablespoons (30g) olive oil
4 tablespoons (56g) unsalted butter
salt
freshly ground pepper
3 cloves of garlic, minced
4 fresh sage leaves or more if desired
1/2 cup (50g) Parmesan cheese, shredded
Instruct
Prepare sweet potato gnocchi.
Preheat oven to 375°F (190°C).
Wash the potatoes and prick them several times on all sides with a fork. Place on a parchment baking sheet.
Bake for 45-60 minutes or until tender when pierced with a knife.
You can also consider microwaving or boiling the sweet potatoes.
Let cool a bit.
Peel and puree them using a potato masher or even a blender.
In a large bowl, mix the mashed potatoes with the eggs and flour until they come together. Knead until a smooth, sticky dough forms.
Dust your hands and work surface with flour and cut out a piece of dough.
Roll into a rope 3/4 inch (2cm) thick. Cut the string into 1/2 inch (1cm) pieces. Shape each gnocchi with a fork.
Transfer the gnocchi to a floured, parchment-lined baking sheet.
Continue with the remaining dough.
Let it rest for 15-20 minutes before boiling.
Boil a large pot of water then reduce the heat to low. Add gnocchi to hot water and cook in batches. Let the gnocchi boil until they float to the surface. Let them boil on the surface for another minute and they’re done. Using a perforated spoon, remove the gnocchi and transfer them to a large plate.
How to prepare gnocchi fried in garlic butter. (1 pound-500g gnocchi)
Heat 2 tablespoons olive oil in a large frying pan.
Add 1 pound (500g) of boiled gnocchi to the pan. Season with salt and pepper. Cook for about 5-6 minutes until golden brown.
Transfer gnocchi to a bowl.
In the same pan, add butter and melt over medium heat. Add fresh sage leaves and cook for about 2 minutes.
Add garlic and cook for 1 more minute.
Add the fried gnocchi back to the pan and stir well.
Add Parmesan cheese, salt and pepper and stir well.
Top the dish with grated Parmesan and fresh sage. Enjoy!
