 2 1/2 cups (315g) all-purpose flour
 1/2 teaspoon (2g) salt
 1 tablespoon (15g) brown sugar
 The passion of a lemon
 15 g fresh yeast (1 teaspoon active dry yeast)
 1 teaspoon (5g) sugar
 2 tablespoons (28ml) oil
 3/4 cup (180ml) warm milk
 1 egg, beaten
apple sauce
 3-4 medium apples (600-800g), peeled, grated and cut into small pieces
 juice from half a lemon
 2 tablespoons (30g) brown sugar
 1/2 teaspoon (1g) ground cinnamon
 1/4 teaspoon (1g) nutmeg
 1/8 teaspoon cloves
 1/3 cup (80ml) water
