Walnut Caramel Mirror Cake – Elegant desserts

Walnut Caramel Mirror Cake – an elegant dessert with a caramel mirror glaze perfect for the upcoming Easter holiday. Walnut cake on the bottom, followed by a layer of semi-smooth chocolate, caramel toasted nut cream and a mascarpone and coffee mousse on top. Everything is coated with a caramel mirror glaze and decorated with a chocolate yellow flower for a more elegant look.

Walnut cake
2 egg whites
A little salt
1/3 cup (70g) sugar
2/3 cup (70g) walnuts, ground
2 tablespoons (20g) all-purpose flour
Chocolate class
Half Week Chocolate 5.5 oz (150g)
3 tablespoons (45ml) whipped cream

Walnut caramel layer
1/3 cup (70g) sugar, for caramel
1 tablespoon (15ml) water
2/3 cup (70g) walnuts, toasted, cut into smaller pieces
5 tablespoons (70g) butter
2 egg yolks
3 tablespoons (45g) sugar to mix with the yolk
a little salt

Mascarpone Mousse
Mascarpone 16 0z (500g), room temperature
2/3 cup (80g) powdered sugar
1 1/2 cups (360g) whipping cream (35% fat), chilled
1 tablespoon (10g) gelatin powder
1/4 cup (60ml) cold water
2 instant teaspoons (4g)
1 teaspoon (5g) vanilla extract

Caramel mirror glaze
1 cup (200g) sugar
1 tablespoon (15ml) lemon juice or water
3.5 fl oz (100ml) of water
3/4 cup (180g) whipped cream
1/2 teaspoon (3g) salt
2 tablespoons (16g) cornstarch
1 tablespoon (15ml) water, to mix with cornstarch
1 tablespoon (10g) gelatin powder
1/4 cup (60ml) cold water to dissolve gelatin

Chocolate flowers
2.5 oz (70g) half a week chocolate, to melt
1 oz (30g) half a week chocolate, to ferment
gold powder, optional
chopped walnuts
