How to make grilled cheese bread

Makes about 4 sandwiches
Grilled tomatoes
9 oz (250g) cherry tomatoes, halved
2 cloves minced garlic
1 tablespoon (15ml) olive oil
1/2 teaspoon (2g) salt
Freshly ground black pepper
For bread
1 1/2 cups (150g) cheddar cheese, grated
Butter, room temperature
Fresh basil leaves
8 slices of bread

1. Prepare roasted tomatoes. Preheat oven to 375°F (190°C).

2. In a medium bowl, mix tomatoes, garlic, olive oil, salt and pepper.

3. Place the tomatoes in the baking tray and spread in an even layer.

4. Bake for 25-30 minutes until tomatoes are cooked through.

5. Prepare the bread. Heat a non-stick pan over medium to high heat. Spread butter on the sides of the bread. With butter on the bottom, top with cheddar cheese, grilled tomatoes and basil leaves. Place remaining bread slices on top, spread butter on top.

6. Place sandwich on pan and cook until underside is golden brown, about 3 minutes. Flip, press with a spatula and bake the other side until crisp, golden brown and cheese melted.

7. Serve immediately.
