Make 18 cheese bombs
2 cups (250g) flour
1 tablespoon (15g) sugar
1 1/2 teaspoons garlic powder
1/4 teaspoon salt
2 1/2 teaspoons (10g) baking powder
5 tablespoons (70g) unsalted cold butter, cut into small cubes
3/4 cup (200g) cold buttermilk
To fill
5 oz (140g) Mozzarella cheese
To brush the tops
2 tablespoons (30g) butter
1/4 teaspoon salt
1 teaspoon fresh parsley, chopped
1 clove of minced garlic
1. Set oven to 400 F (200 C). Line a baking sheet with parchment paper.
2. In a medium sized bowl, mix together flour, sugar, salt, baking powder and garlic powder. Add the butter cubes and use a knife or fork to cut the pastry until the butter pieces are no larger than a pea.
3. Add the cooled buttermilk and gently knead to combine. Refrigerate the dough for 10 minutes.
4. Meanwhile cut the Mozzarella into 18 pieces.
5. Cover the work surface with dough and roll the dough into a 12×15 inch (30x40cm) rectangle. Cut into 18 pieces.
6. Place a piece of cheese in the center of each piece of dough and wrap the dough around the cheese to make sure the edges are covered. Roll up with your hands to form a ball and place in the prepared baking tray.
7. Bake for about 15-18 minutes until golden brown.
8. While they bake, prepare the butter mixture. Melt butter in a small sauce pan, add garlic, parsley and salt and cook for 1 minute. Remove from heat. Cover the tops of the cheese bombs with butter mixture and serve hot.
