Makes 2-3 servings
Dark Chocolate 5.5 oz (150 g)
3 eggs, separated
3 tablespoons (50g) butter
1/4 cup (50g) sugar
flavor – you choose (rum, orange, lemon zest, lemon zest, mint, etc.)
Direction
1. Melt chocolate over bain-marie until smooth. Add butter and mix until well combined.
2. Beat the egg whites until frothy with a mixer and gradually add the sugar and beat until stiff peaks are reached.
3. Beat the yolks with your chosen flavoring ingredients, add to the chocolate mixture.
4. Fold a spoonful of the whites into the chocolate mixture, then pour the chocolate into the remaining whites and fold gently until well combined.
5. Pour the mousse into the serving bowl. Cover with plastic wrap and refrigerate for a few hours or overnight. Garnish if desired before serving.
