I’ve always loved these Easy Australian macaroons, ever since I was a kid, as they’re the dessert my mom used to make every year for the holidays. Australian Lamingtons are no different from vanilla sponge cake squares, dipped in chocolate sauce and covered in desiccated coconut. It’s easy to prepare, but always very enjoyable.

How to make Australian Lamingtons

Produces 24 lamingtons

vanilla cake
5 eggs, separated
1 cup (200g) sugar, divided
1 teaspoon (5g) vanilla extract
1/2 cup (115g) vegetable oil
1/2 cup (120ml) milk
2 cups (250g) flour
2¼ teaspoons (10g) baking powder
1/2 teaspoon (2g) salt

Chocolate sauce
1/2 cup (110g) unsalted butter
2/3 cup (135g) sugar
1/3 cup (40g) unsweetened cocoa powder
1½ cups (360ml) of water
1 teaspoon (5g) vanilla or rum extract
4 oz (120g) half a week chocolate

To cover Lamingtons
2-3 cups (140-200g) desiccated coconut without sugar
