This chocolate honeycomb is an easy candy that can be prepared at home with just six simple ingredients.
Ingredient
1 cup (250g) sugar
5 oz (150g) liquid sugar
2 tablespoons (50g) honey
4 tablespoons (60ml) water
1 tablespoon (15g) baking soda
4 oz (120g) semi-sweet chocolate, brewed
Instruct
Line an 8-inch (20 cm) square baking tray with parchment paper, at least 2.3 inches (6 cm) deep.
In a large saucepan, mix together the water, sugar, glucose, and honey. Heat until ingredients are dissolved.
Once the ingredients have been dissolved, bring to a boil until the temperature reaches 295 F (146 C).
Immediately remove the pan from the heat and add the baking soda at the same time, stirring at the same time. The mixture will start to rise very quickly and will be very hot.
At this point, stop stirring and while it’s still bubbling, pour it into the prepared pan.
Let cool completely, at room temperature for about 2 hours.
After the toffee hardens, remove it from the pan, remove the parchment, and place it on a cooling rack. Under the cooling rack place a large tray.
To ferment the chocolate, melt 3 oz (90g) in a water bath. Turn off the stove and add the remaining chocolate. Stir until completely melted.
Pour half of the chocolate into the toffee and make sure to cover all the edges.
Garnish with Oreo crumbs, almonds or sprinkles while the chocolate is still warm.
Let cool.
Then turn the toffee over and coat the bottom of the toffee with the remaining chocolate. Let cool.
With a sharp knife, cut the honeycomb toffee as desired or you can break it into pieces. Enjoy!
