How to Make creamy Cheese-Wrapped Potato Cakes

How to Make creamy Cheese-Wrapped Potato Cakes

MATERIALS

400 g potatoes
6 tablespoons rice flour
2 tablespoons sugar
1 cup Mozzarella cheese
Garlic salt optional

INSTRUCT

Peel the potatoes and cut them into 1-inch slices. Place the potatoes in a Shallow bowl and steam for 20 minutes or until tender

Mash potatoes until smooth; if you like a bit of texture, you can mash until 90% smooth.
Add rice flour and sugar and mix well (about 5-10 minutes).
Roll 2 ½ tablespoons of dough into a ball and make an indentation in the center. Add the cheese balls, use your thumb to press the filling down and wrap it up. Once closed, roll it up until it forms a ball

In a pan, add oil (enough for ⅓ of the potatoes) and turn the heat to medium-high. When the oil is hot, add the potatoes and gently press down to flatten. Fry for about 3-4 minutes on each side or until golden brown. Pay attention to make sure the cheese doesn’t break.
