Grilled Orzo with Chicken – An easy budget-friendly recipe for lunch or dinner, this Grilled Orzo with Chicken is a delicious dish that you can easily prepare for lunch or dinner. It combines the nutty goodness of grilled orzo noodles with tender, perfectly seasoned pieces of chicken, creating a dish that’s both comforting and flavorful.
Ingredient
As for the chicken
1 ¼ pound (600g) chicken breast, cut into strips
salt and freshly ground black pepper
garlic powder
Oregano
For Orzo pasta
2 tablespoons olive oil
1 pound (500g) orzo pasta
1 medium onion (about 6 oz – 180g)
5 cloves of garlic, chopped
1 red chili (about 4 oz – 120g)
1 cup (240g) pureed tomatoes
5 ½ cups (1.3 liters) vegetable broth
1 teaspoon dried oregano leaves
1 teaspoon dried basil
Salt and round fresh black pepper
Chili flakes, optional
Instruct
Cut chicken into long strips.
Season chicken on both sides with salt, freshly ground black pepper, garlic powder and oregano. Set aside.
How to grill and cook orzo.
Heat olive oil in a large skillet over medium-high heat. Add the orzo pasta, stir constantly and bake for about 5-7 minutes until it turns golden brown.
Transfer the orzo to a bowl and set aside.
How to cook chicken.
Add 1 tablespoon of olive oil to the pan, then add the chicken to the pan and stir-fry for about 4-6 minutes. Flip the chicken and cook for another 4-6 minutes until golden brown. Check to see if the chicken is cooked.
Transfer chicken to a plate.
Stir-fry vegetables and simmer orzo
Add onion to pan and cook for 5 minutes or until onion is soft. Add garlic and cook for 1 minute until fragrant.
Add red pepper and cook for 1 minute.
Add the tomato puree, dried basil and paprika, if using, and cook for another 2 minutes, stirring constantly.
Add grilled orzo and vegetable or chicken broth. Season with salt and pepper and bring to a boil.
Reduce heat to low and cook uncovered for about 15 minutes or until orzo is tender and liquid is almost absorbed.
Arrange the chicken on top of the orzo and cook for another 2-3 minutes to warm the chicken.
Garnish with fresh parsley and lemon slices and enjoy with a fresh salad.
