Beef Stew with Caramelized Onions – Easy Recipe. This Beef Stew is a comforting dish that is sure to bring joy and satisfaction to all who taste it. Tender chunks of beef are simmered in a delicious caramelized onion sauce, enhanced with fiery red peppers, tomato puree and aromatic herbs like thyme and bay leaves.
Ingredient
2 tablespoons (30g) olive oil
2 pounds (900 g) beef patties, brisket or round, cut into 1-inch (3cm) cubes
4 large onions, about 1 ¼ pound (600g), diced
5 cloves of garlic, chopped
1 red pepper, about 4 oz (120g), diced
1 tablespoon (8g) chili powder
cup (1 liter) of vegetable broth
1 can (14 oz -400g) pureed tomatoes
1 tablespoon (15g) Worcestershire sauce
2 sprigs of thyme
2 bay leaves
1 teaspoon (5g) salt
1/4 teaspoon (1g) pepper
Fresh parsley, for garnish
Instruct
Heat oil in a large pot or pan over medium-high heat.
Add beef and cook, turning occasionally, until browned on all sides, about 10 minutes. Transfer beef to a plate.
Add another tablespoon of oil if needed and add chopped onion. Cook the onion, stirring constantly, until soft, about 7-8 minutes.
Add minced garlic and cook for another minute until fragrant.
Add red pepper and stir briefly to combine.
Add chili powder and cook for a few seconds until fragrant.
Return the beef to the pot. Add vegetable broth, tomato puree, Worcestershire sauce, salt, pepper, thyme and bay leaf.
Bring to a boil, then reduce heat to low and simmer.
Cover and cook for 1 to 1 1/2 hours or until beef is tender.
Stir occasionally and add more water if it starts to reduce too much.
Once the beef is tender, remove the bay leaves and thyme and season with salt and pepper if needed.
Sprinkle chopped fresh parsley on top and serve with rice, noodles, mashed potatoes, grilled vegetables, crusty bread or a fresh salad. Enjoy!
