How to Make Chicken Patties

Ingredient

Servings: 14 meatballs
4 cups shredded chicken, from 2 large chicken breasts, (16 oz by weight)
2 large eggs
1/3 cup mayonnaise
1/3 cup all-purpose flour
3 tablespoons fresh dill, finely chopped (or 1 tablespoon parsley)
3/4 teaspoon salt or to taste
1/8 teaspoon black pepper
1 teaspoon lemon peel, add a few lemon slices to serve
1 1/3 cups mozzarella cheese, shredded
2 tablespoons olive oil for stir-frying, divided equally
1 cup Panko breadcrumbs

Mix well in a large mixing bowl: 2 eggs, 1/3 cup mayonnaise, 1/3 cup flour, 3 tablespoons cumin, 1/2 teaspoon salt, 1/8 teaspoon black pepper and 1 teaspoon lemon peel.
Add shredded chicken and 1 1/3 cups shredded mozzarella cheese, stirring until chicken is evenly coated in flour.
Cover the bowl and refrigerate the mixture for at least 30 minutes (this will help the cake form). Use an ice cream scoop to divide into 12-15 cakes then form into 1/2 inch thick cakes. Dip both sides in Panko breadcrumbs.
Place a large non-stick pan on the stove over medium heat. Add 1 tablespoon olive oil and half the chicken pieces. Stir-fry for 3-4 minutes on each side until golden brown, adding more oil if needed. Repeat with remaining chicken pieces.
As soon as the cake comes off the stove, sprinkle salt and squeeze fresh lemon juice over the cake. Eat while still warm.
