Butter biscuits – Pastisetas – soft on the inside, almost melt in the mouth, with a little crunch on the outside, buttery rich and rich. They are great with morning tea or coffee or simply as a snack.

Ingredient
Make about 60 cookies
9 oz (250g) butter, room temperature
1/2 cup (60g) powdered sugar
1 teaspoon (5g) vanilla extract
2 cups (250g) flour
1. Preheat oven to 350F (180C). Roll 2 sheets of parchment paper with parchment paper.
2. Place the butter in a bowl and use a hand mixer to blend until creamy. Add the powdered sugar and vanilla extract and continue mixing for another 12 minutes until the mixture becomes creamy white.
3. Using a spatula, fold the flour into the butter mixture until completely combined.
4. Transfer the dough into a piping bag with a 1M star-shaped tip (½ inch-1 cm).
5. Shape cookies on prepared baking sheets.
6. Bake for 10-12 minutes or until base begins to brown.
7. Let the cake cool completely on a cooling rack before serving.
