Double Chocolate Chunk Cookies

Ingredient:

Makes about 2 dozen cookies

4 ounces (120 g) bitter chocolate
1/2 cup (1 stick-110g) butter
2 large eggs
1 1/4 cup (250g) granulated sugar
1 teaspoon (5g) vanilla extract
1 cup (125g) all-purpose flour
1/2 cup (60g) unsweetened cocoa powder
1/2 teaspoon (3g) salt
1/2 teaspoon baking soda (2g)
1 1/2 cups (8 ounce-240g) chocolate cubes or chocolate chips

Direction

1. Preheat oven to 325 F (165 C). In a medium bowl, mix flour, cocoa, baking soda, and salt. Set aside.

2. Melt butter and 4 ounces of bitter chocolate together over low heat or brandy. Remove from heat and add vanilla extract.

3. Mix eggs and sugar and beat on medium speed with a hand mixer until light and fluffy, about 3 minutes. Add chocolate mixture and stir until well combined.

4. Add flour mixture and stir until just combined. Fold chocolate chips or chocolate pellets.

5. Drop 1-1/2 tablespoon portions 2 inches apart onto a parchment-lined baking tray.

6. Bake for no more than 13 minutes – they should be baked slightly below so the inside is still chewy and tender. Remove the entire sheet of parchment onto a cooling rack and cool until just warm and set.
