The Hummingbird Cake is a delicious layered cake, very popular in the Southern United States, consisting of three wonderfully moist cake layers topped with a delightful cream cheese frosting. The layers are really moist and the flavor comes from adding the consistency of mashed pineapple, mashed ripe bananas and toasted walnuts/pecans, making it a tropical cake.
