Almond sponge cake
2 eggs
1/3 cup (70g) sugar
1/4 teaspoon (1g) salt
2/3 cup (70g) ground almonds
1 tablespoon (10g) flour
1/2 teaspoon (3g) almond extract
1 tablespoon (14g) butter, melted

Ruby Chocolate Almond Crunch
2.5 oz (70g) cookie crumbs (about 5 digestible cookies)
1/2 cup (50g) almonds, chopped
3.5 oz (100g) chocolate ruby
2 tablespoons (30g) whipped cream

Strawberry Mousse
1 pound (450g) fresh or frozen strawberries
1/3 cup (70g) sugar
1 tablespoon (15ml) lemon juice
1/2 tbsp + 1 tbsp (8g) gelatin powder
3 tablespoons (45g) cold water
1 1/2 cups (360g) whipping cream (35% fat), chilled

Ruby chocolate decoration
2 oz (60g) chocolate ruby
(20g) chocolate ruby, for brewing
