Creates about 17-18 large slots

3/4 cup water
5 tablespoons (70g) butter
1/2 teaspoon salt
1/4 teaspoon chili powder
Freshly ground pepper
1 cup flour
3/4 cup grated cheese (hard, sharp cheese)
4 eggs
1/2 cup grated Parmesan


1. Preheat oven to 425°F (220C). Line 1 sheet of parchment paper.

2. Bring water, butter, salt, paprika and pepper to a boil in a medium saucepan, over high heat.

3. Add flour and stir until dough thickens and cook 2 minutes more to dry.

4. Set aside to cool slightly. You can transfer it to a clean bowl and stir to cool it down faster.

5. Add the eggs one at a time and stir until smooth.

6. Add cheese and herbs if using.

7. Using 2 tablespoons drop the dough balls into the prepared baking tray with space between the balls. Sprinkle Parmesan cheese on top of each piece.

8. Bake for 10 minutes at 220 C (425F) and another 20-25 minutes at 190 C (375F). Serve warm and enjoy.
