Makes about 8 pancakes
Streusel Topping
1/4 cup brown sugar
1/4 cup flour
1/4 cup oats
3 tablespoons (45g) butter
1/2 teaspoon cinnamon
Pancakes Batter
1 1/4 cup flour
1 tablespoon sugar
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 egg
1 cup of milk
2 tablespoons vegetable oil
1 cup apples, peeled and diced (about 1 apple)
Direction
1. Prepare the streusel. In a medium bowl, mix the brown sugar, flour, oats, and cinnamon. Cut the butter with a pastry blender or fork until the mixture is crumbly. Set aside.
2. Prepare the pancake batter. In another bowl, mix flour with sugar, baking powder, salt, cinnamon, and nutmeg. Add eggs, milk and oil. Mix until smooth.
3. Peel and dice the apples and combine with the pancake batter.
4. Heat a non-stick pan over medium heat. For each pancake, pour 1/4 cup of batter onto the hot pan. Sprinkle each pancake evenly with 2 tablespoons of the Streusel mix. You can use your hand to gently press the sponge cake to adhere better. Cook for about 2 to 3 minutes or until foamy and dry around the edges. Flip and cook on the other side until lightly golden brown around the edges, about 2 or 3 minutes more.
5. Drizzle with maple syrup, honey, or top with whipped cream.
