Make 9-12 servings

Base
7 oz (200g) digestive biscuits (graham crackers)
1/3 cup (70g) unsalted butter, melted
1/2 cup (120 g) crispy peanut butter or cream

Chocolate class
7 oz (200 g) bitter chocolate (55% -70% cocoa)
1/4 cup (60g) peanut butter, divided

Direction

1. Place biscuits (or graham crackers if using) in the bowl of a food processor and mix until crumbs form. Add the peanut butter and melted butter and process until fully combined and the mixture holds together.

2. Grease an 8×8 inch (20x20cm) square pan and line it with parchment paper, so that some of the sides are longer to make it easier to lift the pan once it’s set.

3. Spread the peanut butter mixture into the prepared baking pan and press the back with a spatula to create a smooth surface.

4. Melt chocolate and 2 tablespoons (30g) creamy peanut butter over bain marie, over low heat. Stir until smooth. Meanwhile, add the remaining 2 tablespoons (30g) of peanut butter to a small sauce pan over low heat and stir until melted and smooth. Spread the chocolate on top of the peanut butter. Add a teaspoon of melted peanut butter on top and swirl the surface with a knife.

5. Put in the refrigerator for 2 hours to set. Let stand 10 minutes at room temperature before cutting. Bars can be frozen well. Interesting!
