Ingredient
Makes about 8-10 servings
Cake powder
1 stick (113g) butter, room temperature
3/4 cup (150g) sugar
4 egg yolks
1/4 cup (60g) sour cream
Grated peel from 1 lemon
1 teaspoon vanilla extract
2 1/2 teaspoons (10g) baking powder
1/4 teaspoon salt
2 cups (250g) flour
apple sauce
4-5 medium apples, peeled and sliced
Juice from half a lemon
1 teaspoon cinnamon
4 tablespoons (30g) flour
pastry made with egg whites and sugar
4 egg whites
3/4 cup (150g) sugar
1. Preheat oven to 350 degrees F (180 degrees C). 10 inch (26 cm) Butter Spring Pan (with removable base).
2. Prepare apples. In a large bowl, mix the apple slices with the lemon juice, cinnamon, and 4 tablespoons flour. Set aside until ready to use.
3. Prepare the cake dough. Place flour, baking powder and salt in medium bowl.
4. In another bowl beat cream with butter and sugar until well blended. Beat egg yolks, sour cream, lemon zest and vanilla extract. Stir in flour mixture and mix until well combined.
5. Pour batter into prepared pan and arrange apple slices on top, bake for 30 minutes.
6. Meanwhile prepare the meringue. Beat egg whites until frothy with a mixer. Gradually add the whipped sugar the whole time until it holds a very stiff peak.
7. Remove the pan from the oven and add the beaten egg whites on top of the cake and bake for another 20 minutes until golden brown. Run the sharp knife completely around the inner edge of the pan. Let cool slightly at room temperature before using.
