This easy recipe to make chocolate pumpkin muffins is moist and full of flavor, a great way to celebrate the season. You can make them with or without chocolate, perfect for breakfast or on-the-go.

Ingredient

Makes about 12 muffins
2 eggs
1 1/4 cup (250g) sugar
1/4 cup (56g) vegetable oil
1 1/2 cups (360g) pureed fresh baked pumpkin
1 cup (125g) flour
3 teaspoons (12g) baking powder
1 teaspoon (3g) cinnamon
1/2 teaspoon (2g) nutmeg
1 teaspoon (5g) vanilla extract
1/2 cup (50g) chopped walnuts
4 oz (120g) chocolate, cut into cubes, optional

1. Set oven to 180C (350F). Grease muffin cups or line paper cups.

2. In a bowl mix flour with seasoning and baking powder.

3. In a large bowl, beat 2 eggs with sugar until blended. Add pumpkin, oil, vanilla extract and mix well. Stir in the flour mixture. If using chocolate, add about 3.5 oz (100g) chocolate cubes to the mixture and set aside 0.5 oz (20g) to coat the muffins after baking.

4. Spoon mixture into prepared muffin cups. Sprinkle walnuts on top of muffins. Bake for 30-35 minutes until the cake is done and the toothpick inserted in the center comes out clean.

5. Cool on wire rack for 5-10 minutes before using. While still warm, you can add a little chocolate on top of each.
