Ingredient
Makes 4-6 servings
Lava Cakes
3 eggs
4 tablespoons (60g) sugar
4 oz (120g) white chocolate
1/2 cup (110g) butter
5 tablespoons (50g) flour
2 tablespoons (16g) unsweetened cocoa powder
a little salt
1 tablespoon (15g) red food coloring
Cream Cheese Frosting (optional)
3.5 oz (100g) cream cheese, room temperature
2 tablespoons (16g) powdered sugar
1/2 teaspoon (3g) vanilla extract
1/2 cup (120g) whipped cream, chilled
To decorate
fresh berries, optional
powdered sugar, optional
1.Place the oven to 200°C (400°F). Cook 4 – 8oz (230g) of ramekins and dust with sugar or flour.
2. Melt chocolate and butter over bain-marie until smooth. Meanwhile, beat eggs with sugar and salt with a whisk or mixer until thick and light golden in color. Add melted chocolate and mix well. Add red food coloring and mix to combine.
3. In a bowl, mix flour with cocoa powder and salt and gradually add to chocolate mixture. Pour the dough into the prepared molds.
4. Bake for 14-16 minutes until edges are firm and center is still tender.
5. While the cake is baking, prepare the cream cheese frosting if using for garnish. Add cream cheese to the bowl and mix until smooth for a few seconds. Add powdered sugar and vanilla extract and mix until combined. Add the cooled whipped cream and mix until stiff peaks form.
6. Remove the cake from the oven and let it cool slightly for 3-4 minutes. Run the sharp tool completely around the inner edge of the die and reverse into the disc.
7. Garnish as desired, can be sprinkled with powdered sugar or topped with cream cheese and raspberries or fresh strawberries. Serve immediately.
