Ever since I made Medovik – Russian Honey Cake, I’ve been wanting to try a chocolate version of it. I finally did and it was totally fun. Chocolate Medovik – Chocolate Honey Cake consists of eight layers of honey cocoa with cocoa cream filling and topped with chocolate glaze. The layers will be softened by the filling and they simply melt in your mouth.

Ingredient

Makes about 12-14 servings
Cocoa honey cake layers
3 3/4 cup (470g) all-purpose flour
1/2 cup (60g) cocoa powder
1/2 cup (113g) butter
1/3 cup (120g) honey
2/3 cup (135g) sugar
1 teaspoon baking soda (6g)
1/2 teaspoon (3g) salt
1 teaspoon (5g) vanilla extract
3 eggs

Sour Cream Frosting
2 cups (500g) sour cream, 25% fat
2/3 cup (80g) powdered sugar
2 tablespoons (16g) cocoa powder
2 tablespoons (40g) honey
1 teaspoon (5g) vanilla extract
2 cups (500g), 35% fat whipping cream, chilled

chocolate glaze
3.5 oz (100g) half a week chocolate
4 oz (120g) whipped cream

Shredded Caramel
1/2 cup (100g) sugar
1 tablespoon (15ml) water
