Medovik – Russian Honey Cake – Great desserts

If there’s one thing I admire about Medovik – Russian Honey Cake and Russian Pastry, it’s the patience in actually creating and layering these desserts. Medovik is a perfect example of Russian honey cakes with layers, delicious sour cream and just a hint of orange and cardamom. How To Make Medovik

Makes about 12-14 servings

Layer of honey cake
4 1/4 cups (550g) all-purpose flour, sifted
1/2 cup (113g) butter
1/3 cup (120g) honey
2/3 cup (135g) sugar
1 teaspoon baking soda (6g)
1/2 teaspoon (3g) salt
1 teaspoon (5g) vanilla extract
3 eggs

Sour Cream Frosting
2 cups (500g) sour cream, 25% fat
2/3 cup (80g) powdered sugar
2 tablespoons (40g) honey
1 teaspoon (5g) vanilla extract
2 cups (500g), 35% fat whipping cream, chilled
