Layer of honey cake
4 1/4 cups (550g) all-purpose flour, sifted
1/2 cup (113g) butter
1/3 cup (120g) honey
2/3 cup (135g) sugar
1 teaspoon baking soda (6g)
1/2 teaspoon (3g) salt
1 teaspoon (5g) vanilla extract
3 eggs
Sour Cream Frosting
2 cups (500g) sour cream, 25% fat
2/3 cup (80g) powdered sugar
2 tablespoons (40g) honey
1 teaspoon (5g) vanilla extract
2 cups (500g), 35% fat whipping cream, chilled
If there’s one thing I admire about Medovik – Russian Honey Cake and Russian Pastry, it’s the patience in actually creating and layering these desserts. It’s unbelievable how long all of these layers take, but then it’s amazing how much they taste. Medovik is a perfect example of Russian honey cakes with layers, delicious sour cream and just a hint of orange and cardamom. The flavors themselves may not be all Russian, but no matter what flavorings you’re using, just creating this cake is a mission on its own.
