Strawberry Easter Cake – strawberry layered cake with white chocolate strawberry topping, covered with chocolate ganache and decorated in the spirit of Easter. This is one of the best strawberry cakes I’ve made, it’s pretty easy to prepare and perfect for spring and Easter celebrations.

2 cups (250g) all-purpose flour
2 1/2 teaspoons (10g) baking powder
1/2 teaspoon (3g) salt
3/4 cup (170g) unsalted butter, room temperature
1 1/4 cup (250g) sugar

4 eggs
2 teaspoons (10g) vanilla extract
7 oz (200g) fresh strawberries, pureed

2 tablespoons (30g) sugar
Strawberry cream white chocolate
5.5 oz (150g) white chocolate, small pieces
1/4 cup (60g) whipped cream
Cream cheese 10 oz (300g), room temperature
1/3 cup (40g) powdered sugar
1 1/4 cups (300g) whipped cream (35% fat), chilled
1/3 cup (80g) strawberry jam with seeds
6-7 teaspoons (6g) frozen strawberries, finely ground
