Homemade waffles are a kind of comfort food that everyone loves and there is never enough of it. This is my favorite waffle recipe to date. The batter is easy to make and the waffles are light, crunchy, and spongy.

Make about 10 waffles
2 cups (250g) all-purpose flour
2 teaspoons (8g) baking powder
1/2 teaspoon (3g) salt
3 tablespoons (45g) sugar
1 teaspoon (5g) vanilla extract
2 cups (480ml) milk
2 eggs, separated
3 tablespoons (45g) butter – melted
1. In a large bowl, mix together the dry ingredients: flour, baking powder, and salt.
2. Separate eggs. Mix egg yolks with sugar, butter, vanilla and 1 cup milk. Add flour mixture and mix until well combined. Add the remaining milk cups one at a time and mix well.
3. Beat the egg whites and gently fold into the yolk mixture.
4. Preheat your waffle iron and apply oil spray or grease to both surfaces. Pour about 1/3 cup of batter onto one side of the iron and cover.
5. Bake until the iron’s indicator light indicates it’s done cooking and the waffles are golden brown and crispy. It’s best to serve them immediately with butter, maple syrup or honey and fruit.
