Really easy, quick and so delicious, these egg boats are crispy on the outside, soft on the inside and served warm along with some fresh salads.

How to make Egg Boats

Make about 2-3 servings
2 demi baguettes
4 eggs
2 tablespoons (30g) heavy cream
3.5 oz (100g) slices of bacon
1/2 cup (50g) cheddar cheese
1/4 cup (25g) Parmesan cheese
2 onions, chopped
freshly ground salt and black pepper

1. Set oven to 350F (180C).

2. Slice bacon into smaller pieces and cook to desired crispiness. Set aside to cool.

3. In a medium bowl, mix eggs, cream, cheese, bacon, and onion. Season with salt and pepper.

4. Cut a deep ā€œVā€ through the top of the bread and do not stuff part of the bread. Place the bagel on a baking tray lined with parchment paper.

5. Pour the egg mixture into the prepared bagels.

6. Bake for 20-25 minutes until golden brown and egg mixture set.

Let cool for about 5 minutes, cut and serve warm.
