These cheese bars are a great savory snack for any occasion. Buttery, crunchy, with a cheese flavor and they can be made a few days in advance. You can also sprinkle flax or sesame seeds on top, a little paprika for extra color, garlic powder for extra flavor, or whatever spices and herbs you like best.

How to make Cheese Sticks

Makes about 80 cheese sticks
1 stick (110 g) butter, cut into smaller pieces
1 egg
1/4 cup (50 ml) oil
1/4 cup (50 ml) milk
25 g fresh yeast (2 1/4 teaspoon active dry yeast)
1/2 cup (50 g) cheddar cheese, grated
3 cups (375g) all-purpose flour
1 1/2 tablespoons wheat bran, optional
1 teaspoon (5g) sugar
1 teaspoon (5g) salt
Cover the food
1 egg, beaten
3/4 cup (75g) Parmesan cheese

1. In a large bowl mix flour with salt, sugar and wheat bran if using. Add the pieces of butter and use a pastry knife or fork to cut the butter until it is no larger than a pea.

2. Add grated cheddar cheese and simply stir quickly to combine with flour mixture.

3. Beat eggs with oil in a separate bowl. Dissolve the yeast in the milk and add to the egg mixture. Add the egg mixture to the flour mixture and knead until the dough is smooth and pulls away from the sides of the bowl. Cover the bowl with cling film and place in the fridge for 1 to 2 hours to allow the yeast to develop.

4. Preheat oven to 180C (350F).

5. Divide the dough in half. Take a piece of dough and roll it on the back of a 12×16 inch (30×40 cm) baking tray. Cut the edges straight.

6. Beat the rolled dough with the beaten egg. Sprinkle the grated Parmesan cheese on top and use a knife to cut the dough into 1/2×6 inch (1x15cm) sticks. Bake for about 18-20 minutes until golden brown.

7. Repeat with remaining dough. Let the cheese sticks cool and store in an airtight container for up to a week.
