Homemade Broccoli Quesadillas with Tortillas take just a few minutes to prepare and the final dish is healthy and delicious, perfect for lunch or dinner. You can use any leftover cooked broccoli or you can just cook the broccoli specifically for this recipe.

Make 4 servings
1 cup broccoli, cooked and chopped, room temperature
1 cup mozzarella, chopped
1/4 cup corn kernels
1/4 teaspoon garlic powder
4 flour loaves (10 inches), room temperature
Salt and freshly ground black pepper, to taste
2 tablespoons olive oil

1. If you want to use homemade tortillas, this should be the first step. For homemade cornbread, you can find the recipe here. Once done, let them cool down, to reach room temperature.
2. To cook broccoli, bring a large pot of water to a boil. Add a teaspoon of salt. Add broccoli and cook until tender, about 2 minutes. Remove and place in a bowl with ice water. Drain and chop broccoli.
3. Combine broccoli with cheese, corn, and garlic powder. Add salt and pepper. Divide the mixture into four, for each tortilla. Pour the mixture over half of the tortilla, and fold over with the other half.
