Makes about 8-10 servings
4-5 apples
50 g (1/4 cup) +1 tablespoon butter
7 tablespoons (100g) sugar, divided
1 teaspoon (3g) ground cinnamon
Cake
1/3 cup (75g) butter, room temperature
5 tablespoons (75g) sugar
3 eggs
3 tablespoons (45g) sour cream
Peel of 1 lemon
1 teaspoon (5g) vanilla extract
2 teaspoons (8g) baking powder
11 tablespoons (150g) flour
Direction
1. Preheat oven to 350 degrees F (180 degrees C). Butter a 10-inch (26 cm) round cake pan.
2. Peel the apples and drizzle lemon juice on top. Cut them into wedges, remove the core and slice.
3. Melt butter in sauce pan. Add 5 tablespoons sugar and cook until sugar dissolves and mixture turns golden brown. Pour the mixture into the prepared pan and arrange the apple slices. Sprinkle 2 tablespoons of sugar and add 1 tablespoon of chopped butter on top of apples. Cook in the oven until you have prepared the dough for the cake.
4. While the apples are in the oven, prepare the pie dough. Separate the egg whites from the egg yolks. Whisk the flour and baking powder together in a small bowl and set aside.
5. In a large bowl, beat cream with butter and sugar until well blended. Beat egg yolks, sour cream, lemon zest and vanilla extract. Stir in the flour mixture.
6. Beat egg whites until stiff and firm. Fold them into the butter mixture.
7. Remove apples from oven and sprinkle cinnamon on top. Pour batter over apples and bake for 25-30 minutes until golden and a toothpick inserted in the center comes out clean.
8. Remove the cake from the oven and let it rest for about 5 minutes, then run a knife around the edge of the cake to loosen the cake from the sides of the pan and turn the cake upside down onto a plate.
9. Can be served as it is or with vanilla ice cream. Interesting!
